It is a kind of natural edible pigment extracted from gardenia fruit of rubiaceous plant. The main compositions are crocin and cricetin of series of carotinoid pigment. The powder color from absinthe-green to bottle-green is soluble in water and solution of water and alcohol, but insoluble in organic solvent. The environment pH value has little influence on its hue and stability.
Application: it can be used in the coloring of wine, carbonic acid drinks, juice drink, jam, jelly, candy, cakes, ice-cream, pastry, and puffed food.
Package: inner package is aluminum foil bag; outer package is carton.
